Once upon a time there was... Mediterranean Couscous


This is one of our all-time favorite easy recipes to whip up for weekday lunches.  We bought a pre-made package of a similar couscous at Wegmans one time and thought it was good - but needed work.  So a few attempts later, we made up our own recipe.  This is a Castle Farm original!

All the stuff you put in it can be adjusted of course.



ingredients
1 c. dry couscous
1/4 c green pepper, diced
1/4 c red pepper, diced
1/4 c orange pepper, diced

1/3 c feta cheese, crumbled
1 clove garlic, minced
1 green onion, chopped
4 sundried tomato halves, roughly chopped

Cornelius' tip: remember you will have to bring these to room temperature if they are in the fridge
1/3 c Greek vinaigrette
we like the make our own Greek dressing with the Good Seasons mix
dried basil, parsely, salt and pepper to taste

instructions


1. chop all your stuff.

2. Cook couscous according to package directions.

3. Combine all ingredients in a large bowl.  Refrigerate (serve chilled)

And that's it! Healthy and delicious (not to mention beautiful) lunches all week!
