Greek Week Presents... Htipiti

What's htipiti?  Greek roasted red pepper and feta dip, of course!

This dip was AMAZING.  Like, we could just eat it by the batch. That probably wouldn't be a good idea though.  Plus, we have three other pretty great dips to eat at the same time.

Anyway, we can't say enough good things about this dip.  It came from Kevin at Closet Cooking who is always sharing delicious and original recipes.

4 oz feta
1 red pepper, roasted
1 jalapeno pepper, roasted
2 oz sun dried tomatoes in oil
1 clove garlic
1 green onion
1 Tbsp lemon juice

1. Roast your peppers.  Closet Cooking has a good tutorial here.

We roasted them for 20 minutes, which was definitely too long for the jalapeno and not quite enough time for the red pepper.  You should just watch them closely while cooking.

2. Throw everything in the processor.

3. Chop! Chop! Chop!

4. Chill 1/2 hour or so to let the flavors set.

This dip is really great.

Must eat more dip...

pig, out.
