2 Tbsp heavy cream
1/2 c applesauce
dash of ginger
salt and pepper
2 apples
3 Tbsp brown sugar

2. prep apples. while the potatoes are cooling, dice apples into 1 inch cubes. toss in a bowl with sugar and cinnamon. melt 2 Tbsp butter in a skillet. Add apples and cook until caramelized, about 10 min.
3. whip potatoes. cut each potato lengthwise and scoop the flesh into a bowl (discard skins). add 2 Tbsp butter and the cream, then mix until smooth. Add applesauce and ginger and salt and pepper to taste.

We definitely recommend this dish. And it reheated well too!

Hmmm do you think we could use margarine and soy milk for the butter and cream? This sounds so yummy!
ReplyDeleteI don't see why not. Although you would certainly expect a cooking pig and cow to prefer vegan meals, we go against our nature and enjoy the meat. that said, those sound like perfect and easy substitutions to make this meal work for you!
