Once upon a time there was... Whipped Sweet Potatoes with Caramelized Apples


Cornelius and I actually made this fantastic meal nearly a month ago. We've been quite busy with throwing a Halloween party and assorted other projects. But did we photograph any of our exploits? No. But we'll try to be better about that in the future. Anyway, the delay in posting should be no reflection on the yumminess of this meal. We got this recipe from Martha Stewart and it was delicious. Keep in mind that baking these potatoes can take a while (we forgot about that part and didn't eat until about 9 pm that night).

ingredients
4 large sweet potatoes
1/4 c. unsalted butter, softened
2 Tbsp heavy cream
1/2 c applesauce
dash of ginger
salt and pepper
2 apples
3 Tbsp brown sugar
1 tsp cinnamon

instructions
1. cook potatoes. preheat oven to 374. pierce around potatoes with a fork. bake 70-80 min or until tender. let cool until they can be handled.

2. prep apples. while the potatoes are cooling, dice apples into 1 inch cubes. toss in a bowl with sugar and cinnamon. melt 2 Tbsp butter in a skillet. Add apples and cook until caramelized, about 10 min.

3. whip potatoes. cut each potato lengthwise and scoop the flesh into a bowl (discard skins). add 2 Tbsp butter and the cream, then mix until smooth. Add applesauce and ginger and salt and pepper to taste.




4. bake. transfer potato mixer to an oven safe dish. top with the apple mixture. bake until heated through (about 10 min).

We definitely recommend this dish. And it reheated well too!

  1. Hmmm do you think we could use margarine and soy milk for the butter and cream? This sounds so yummy!

  2. I don't see why not. Although you would certainly expect a cooking pig and cow to prefer vegan meals, we go against our nature and enjoy the meat. that said, those sound like perfect and easy substitutions to make this meal work for you!
