Once upon a time there was... Lemon Dijon Chicken


Today we have a delicious, quick, easy, healthy chicken recipe.  You never can have too many! We originally found this one at All-ChickenRecipes, we adapted it slightly, and it has become a staple at the Castle Farm.  The ingredients listed below are enough for 6 chicken breasts.  We usually 1/2 them since we are only making 2.



ingredients
1/2 c breadcrumbs

2 tsp lemon rind
3 Tbsp  Dijon mustard
3 Tbsp lemon juice
1 Tbsp lime juice
2-6 boneless, skinless chicken breast halves
Lemon slices for garnish

instructions

1. Preheat oven to 375.

2. Prep.  Put breadcrumbs and lemon rind in a shallow dish.  

Put mustard, lemon juice and lime juice in another. 

3. Dip.  Coat your chicken in the mustard mix.  Then dredge it in the crumbs.

4. Put chicken in a baking dish.  Drizzle extra mustard sauce over the chicken.

Cornelius' tip: Note that you are putting the mustard on the chicken BEFORE it bakes.  If you added it after it baked, you might give yourself chicken disease.

5. Bake about 30 minutes, until chicken is cooked through.  


That's it! It's a a really nice homestyle kind of chicken.  As you can see, we served it with some homemade mashed potatoes and green beans.
