Once upon a time there was... Broccoli and Cheddar Soup


So, we are not the biggest fans of eating our vegetables. . .

But we do like cheese! So, in order to eat our vegetables, we smother them in cheese!!! Really, this is an excellent idea that can be applied to most foods you might not otherwise like.  (Adding some onion and butter can't hurt either.)  There are a lot of variations of broccoli and cheese soup out there, but we really liked this classic, simple one we found on AllRecipes.



ingredients
1/4 c butter
1 onion, chopped 
2 tsp garlic powder
1/2 tsp white pepper
1 lb fresh or frozen broccoli, chopped

1 quart chicken broth
1/2 c flour
1 1/2 c milk
salt
8 oz sharp cheddar cheese, shredded 

instructions

1. Melt butter in a big stockpot.

 Add onions, and cook until they are soft.

2. Add garlic and pepper, cook and stir for a minute.

3. Add broccoli and chicken broth. Bring to a boil and then simmer 10-15 minutes, until broccoli is tender. (Note that this will take longer for frozen broccoli then fresh.)

4. Meanwhile, in a separate bowl, whisk together flour and milk until flour is dissolved. Stir into soup until thickened.

5. Reduce heat. Stir in cheese until it's all melty and delicious looking. Season with salt to taste.

We recommend eating this with some crusty bread, and maybe a crisp salad.
