Once upon a time there was... Chicken Satay Lettuce Wraps

Wrapping food in lettuce just makes it seem so much healthier. "Yes waiter, I'll have the large soda, fries, and bacon double cheeseburger - but could you sub a lettuce wrap for the roll? I'm on a diet. " That's my kind of diet.

So now take an already pretty healthy meal, like chicken satay, and wrap it in lettuce, and you've got a super healthy dinner! Cornelius and I didn't invent this concept, but we did invent this exact variation. It's a mess to eat, and it's time consuming to make - but it is also delicious and healthy! (it's wrapped in lettuce, isn't it?)

ingredients (serves 2)

8 oz chicken breast, diced very small
2 Tbsp soy sauce
1 Tbsp lime juice
1 clove garlic, minced
pinch of red pepper flakes
peanut sauce
1 tsp lime juice
2 Tbsp rice vinegar
2 Tbsp chunky peanut butter
1/2 tsp cilantro
1/4 tsp ginger
1 clove garlic, minced
2 tsp soy sauce
1 Tbsp light brown sugar
1 tsp sesame oil
1/4 cucumber
1 tsp rice vinegar
1 tsp sesame oil
dash of salt
1/4 c peanuts, finely chopped
1/4 c crunchy lo mein noodles
1 green onion, sliced
lettuce, hole leaves, rinsed


1. prepare chicken and marinade.
a. chop chicken very small

b. combine marinade ingredients.

c. pour marinade over chicken and set aside.

2. prepare cucumbers.
a. chop cucumbers very small.

b. pour oil and vinegar over cucumber. sprinkle with salt. set aside

3. prepare peanut sauce.
a. whisk together lime juice, vinegar, and peanut peanut until smooth (or as smooth as
chunky peanut butter can be).

b. Stir in the rest of the peanut sauce ingredients. set aside.

4. prepare other stuff.
a. chop peanuts, put lo mein noodles in a little bowl, chop green onion.

b. rinse and set aside lettuce.

5. cook chicken.
a. heat a wok to medium high. cook chicken until cooked through (this will not take very long since the chicken is so small).

6. serve in some sort of beautiful way.

We didn't take pictures of put-together wraps because they are ridiculously messy! Luckily they are also ridiculously yummy! No nutrition info on this since we dont know how much you will stuff your lettuces.
